New Bar: Origin Hong Kong

If there's someone who knows her alcohol, it's Charlene Dawes. After opening Tastings wine bar on Wellington Street, she's since made her mark on Hollywood Road with two of Hong Kong's hippest bars: Angel's Share whisky bar and Quinary cocktail bar. Now, she extends her empire to Wyndham Street with Origin Hong Kong.

What it is: If you haven't guessed already, Origin Hong Kong is focused on the 'G' in G&T: gin. Helmed by renowned local mixologist Antonio Lai, the first gin-focused bar in town serves signature cocktails created with culinary methods, including a rotary evaporator for redistilling unique flavours into gin and a water-bath and vacuum to slow cook.

Atmosphere: Located across Tazmania Ballroom on Wyndham Street, Origin Hong Kong features an ultra-high ceiling, exposed brick walls, plaid upholstery and a sexy, caged-in bar with arched openings. Lounge music provides an easy soundtrack for good conversation over cocktails, making Origin a great place to chill before hitting up the nearby clubs.

Drinks: Try the 12 different homemade gin flavours (HK$110) at Origin Hong Kong, including lemongrass, basil, raspberry, orange and grapefruit.

Signature gin cocktails include the Basil Smash (HK$120), a mixture of basil redistilled gin, egg white, simple syrup and a dash of basil bitters, or the chamomile cocktail The Remedy (HK$110), made with Beefeater gin with homemade chamomile tea cordial carbonated with Perlini shake.

For non-gin drinkers, there's also a selection of classic cocktails, wine and other beverages on offer.

Verdict: With its combination of creative cocktails, sexy interior and prime location on Wyndham Street, we expect Origin Hong Kong to be another one of Dawes' hits among the hip and trendy Hong Kong crowd.
