Mandarin Oriental Hong Kong taps Daniel Humm to mark 50th anniversary

French chef Gagnaire will return to his Hong Kong restaurant outpost of Pierre at the Mandarin Oriental, where he will launch a decadent black truffle tasting menu -- and perhaps try to restore the dining room’s reputation.

The restaurant suffered a blow recently, after it was demoted from two to single-star status in the latest Michelin guide, released in December.

The hotel has also tapped New York chef Daniel Humm to set up a pop-up restaurant in March and recreate dishes from his triple Michelin-starred eatery Eleven Madison Park.

Guests will have a choice between a seven-course lunch menu and a nine-course dinner that will include some of his signature dishes such as his foie gras terrine with green asparagus, Miner’s lettuce and black truffles and grapefruit soda pop.

Each dish will highlight a single, seasonal ingredient, the premise behind Eleven Madison Park’s dining philosophy.

Guests will also take home a signed copy of "Eleven Madison Park: The Cookbook" and meet the chef.

Though the stint will mark the first time Humm has cooked in Hong Kong, it won’t be the first time he’s recreated his restaurant outside his New York kitchen. Last year, Humm and Chicago chef Grant Achatz swapped kitchens, so that New Yorkers were able to sample Achatz’s Alinea menu and Chicago residents got a taste of Eleven Madison Park.

Other events being held throughout 2013 to mark the hotel’s golden anniversary include a photo exhibit that traces the property’s history throughout the years; a port tasting throughout March held in conjunction with a special dinner where British dishes will be paired with the finest ports including a vintage circa 1963; and a Golden Celebration Stay package where guests will be greeted with a bottle of champagne, a $50 USD spa credit, an anniversary gift and breakfast, starting at $4,400 HKD (€420) a night.

The Mandarin Oriental Hong Kong overlooks the Victoria Harbor and has 430 guestrooms, 10 restaurants and bars, and a spa and wellness center.

Meanwhile, it’s not the only landmark hotel to celebrate a major milestone this year. The Hotel Plaza Athénée in Paris also celebrates its 100th anniversary this year.

Between March 13 to 17, Humm will take over the kitchen at the Mandarin Grill + Bar, where he will serve a seven-course luncheon with wine at $3,688 HKD (€350), and a nine-course dinner with wine for $5,288 HKD (€500).
